Im telling y’all, the next few months will be tomato and basil palooza and I am HERE for it! I play tennis on Tuesday nights with a great group of people. We drink wine, nibble on apps and maybe get a little tennis in. No actually we do play, then we socialize a bit after. I had a great idea to make something shareable with tomatoes and basil and this turned out great!
You will need:
2 cups whole milk ricotta
1/3 cup grated pecorino or parmesan
1 tbsp olive oil
2 tomato’s seeded and diced
Salt and pepper
1 tbsp basil chopped
Place ricotta between paper towels to remove moisture. Sprinkle tomatoes with a bit of salt and place in a colander for about 15 minutes. Move to a paper towel to remove the rest of the moisture, patting them dry a bit.
Put ricotta, grated cheese and olive oil in a bowl and mix well. Add salt and pepper to taste. Spread into a shallow container ( I keep to go containers just for this occasion). Top with tomatoes, basil, black pepper and another drizzle of olive oil.
Serve with pita points, pretzel chips or crackers.
