Crispy Roasted Chickpeas

Chickpeas, also known as garbanzo beans,  are highly nutritious, offering numerous health benefits due to their rich content of protein, dietary fiber, vitamins, and minerals such as iron, folate, magnesium, and potassium. Their high fiber content promotes digestive health, helps maintain stable blood sugar levels, and supports cardiovascular health by reducing cholesterol. Additionally, chickpeas contain plant-based proteins, making them a valuable source of nutrition.  I love them in salads and soups, but here is a great recipe for a crunchy, tasty snack!


You will need:

1 1/2 cups canned chick peas drained and rinsed

Extra virgin olive oil drizzling

Sea salt

Paprika


Preheat the oven to 425 degrees. Spread the chickpeas on a kitchen towel and pat dry. Remove any loose skins.Transfer the dried chickpeas to the baking sheet and toss them with a drizzle of olive oil, generous pinches of salt.

Roast the chickpeas for 20 to 30 minutes, or until golden brown and crisp. Remove from the oven and, while the chickpeas are still warm, toss with pinches of paprika,
