Mashed potatoes are the perfect accompaniment for comfort foods. Recently I made some healthy mashed potatoes and they were delicious. Keeping the potato skins on adds many nutrients such as fiber and potassium, and of course olive oil has its own health benefits, in addition to amazing flavor!
You will need:
1 1/2 pounds Yukon Gold potatoes unpeeled and cut into equal sized pieces
1/2 cup vegetable or chicken broth
1 tablespoon olive oil
2 cloves garlic minced
1/2 teaspoon salt
1/4 teaspoon pepper
Minced parsley (optional)
Bring a pot of water to a boil and add your potatoes. Keep boiling and cook them for about 20 minutes until fork tender. Drain the potatoes and place them back into the pot. Add broth, olive oil, minced garlic, salt and pepper to pot. Using a potato masher, Mash until the potatoes are creamy. You can garnish with paprika or minced parsley.
