Y’all know I love to make my meatballs with turkey, but making meatloaf with turkey tonight was life changing. Again, the reason I love ground turkey is because its much lighter tasting( as well as less fat and calories) than ground beef. Many times we are afraid of losing flavor with turkey vs ground beef, but make no mistake, this was a flavor explosion!!
You will need :
1 lb ground turkey
1 egg
1 stalk celery
1 carrot
2 garlic cloves
1/2 sweet onion
Olive oil
Handful of minced fresh parsley
1 cup bread crumbs
Salt and pepper
FIRST~ finely mince onion, celery, carrot and garlic in a food processor. Sauté in a pan with olive oil until soft. Add salt and pepper. Make sure the pan isn’t so hot they burn, but more of a “sweat”. LET IT COME TO ROOM TEMP.
Preheat oven to 400. In a large bowl, mix the ground turkey, parsley, egg, breadcrumbs and room temp veggies ( mirepoix). Mix with hands until fully combined. Spray 8 cups of a muffin tin with cooking spray. Lightly put the turkey mixture in each cup. Bake for 30 minutes. Serve with sauce of choice.
I served over mashed sweet potatoes ( 2 potato’s baked, scooped and mashed with butter and a little light cream). I had some curry paste so I mixed with honey, mustard, ketchup and a bit of ground ginger and heated until blended. However you could use BBQ sauce mixed with soy sauce and /or sweet chili sauce. Just get creative and make a sweet savory sauce to put over it. That combination compliments these meatloaf muffins perfectly.
