Its peach season here in South Carolina! And while everyone has peach cobbler on their mind, I am thinking of my Italian roots, peaches in wine. This is served in summer on the Amalfi Coast. Who doesn’t love a lil boozy dessert? Think of it as a sort of Sangria, a sort of eat-and-drink dessert, passed on from generation to generation and typically consumed after a meal or on hot summer evenings. Some people add sugar, I didn’t and since I don’t like overly sweet things, I don’t feel its needed. I did add a bit of mint because mine is over growing! Even my husband liked this! I served with some fabulous imported biscotti that I found at Home Goods!
You will need:
One peach per person
Dry White Wine (I used a Pinot Grigio, Chardonnay will be too heavy).
Peel and chop the peaches, put them into a bowl.
Add just enough wine to cover the peaches.
Let rest at room temperature for 2-3 hours.
Cover and refrigerate all day or overnight.
Serve chilled!
