Pimms Cup

I have found the PERFECT summer cocktail.  I cant believe I was today years old before I ever tried this one!

In honor of my upcoming trip to London, I thought it would be fun to make this iconic drink.  The Pimm’s Cup started as a health drink in the 1840s in London. It was James Pimm who blended his famous No. 1 Cup, a secret recipe of gin, herbs and liqueur. It acted as an aid for digesting oysters in his London Oyster bar. The drink is also a New Orleans staple especially during the hot summers months. Pimm's No 1 is low in alcohol and so the gin-based cocktail is lighter than other choices. Still popular in London and the English countryside, more than 40,000 pints of Pimm's Cup are consumed in the two weeks of Wimbledon.


You will need:


2 oz Pimm’s No. 1

1 wedge of lemon

Ginger ale

Garnish with mint sprig and strawberry


Muddle lemon in a bottom of highball glass releasing juices, remove seeds before. Fill with ice and add Pimms, then top with ginger ale and stir briefly to combine.  Add garnish.
