Pool Party Pasta Salad

It was so amazing to be invited to a pool party over the weekend.  My friend is a fabulous cook and hostess, with a beautiful home and pool area.  I was asked to bring a side so I thought a nice pasta salad would be good.  This is really just my Mediterranean pasta salad with a few extras like chick peas, but I thought the name was fun. It feeds a good crowd and goes perfectly with burgers!


You will need:

1 box mini penne pasta cooked

1 can chick peas rinsed and drained

1/3 cup chopped vidalia onion

1 cup chopped Kalamata olives

1/2 cup chopped jarred roasted red peppers

1 medium tomato chopped

2 handfuls arugula

1-2 cups crumbled feta

1/3 cup olive oil

2 tbsp white wine vinegar

1/4 cup mayonnaise

1 garlic clove minced



While the pasta is cooking, in a large bowl mix olive oil, garlic, vinegar, mayo, salt and pepper until blended.  Add hot pasta to bowl and mix thoroughly.  Let come to room temp then add onion, chick peas, olives, red peppers, tomato, feta and arugula.   Blend well, add more salt and pepper if desired.  Refrigerate for several hours before serving.
