Also known as garlic confit, this becomes more of a condiment when baked and caramelized. Add to mashed potatoes, cannellini beans, blend with butter and herbs or slather it by itself on bread, it just elevates the flavor without being over powering.
You will need:
Olive oil
Sea or kosher salt
Several heads of garlic, top sliced off
Rosemary and/or thyme
Heat oven to 350. Place garlic in a baking dish and drizzle with olive oil and sprinkle with salt. Roast for 35 minutes. When you can insert a small pairing knife in to a clove smoothly, it’s finished. Be careful not to over cook. Remove from oven, cool and use it however you would like!
As for me, I love to mix with French butter and add herbs like thyme and rosemary. Spread on some focaccia bread and enjoy with a crisp white wine!
