Strawberry, Shrimp and Arugula Salad

Y’all asked for something light for new recipes! It’s strawberry season so I incorporated sweet berries, with peppery arugula and fresh shrimp. So good and perfect for the summer!


Salad:

2 big handfuls of Arugula

1/2 lb P&D shrimp

1/2 cup crumbled feta ( I purchase in block and crumble myself)

1 cup sliced cucumbers

1/4 red onion sliced

4 strawberries sliced

Slivered almonds for garnish ( optional)


Dressing:

2 tbsp fresh orange juice

1 tbsp fresh lemon juice

3 tbsp extra virgin olive oil ( cold pressed is best for salads)

1/2 tbsp honey

1/2 tsp ground ginger

1/2 tsp garlic salt

1 tsp fresh cracked black pepper

Start by making the dressing first by mixing the ingredients together and setting aside. Sear the shrimp quickly in a hot pan with a little cooking spray, 5 minutes most. Remove from pan and put in bowl and set aside.


In a large salad bowl mix the salad ingredients and dressing with the shrimp and feta. Toss well and plate. Top with almonds and additional cracked pepper.
