The Royal Hawaiian

My former neighbor shared this cocktail, and now more than ever, it has significant meaning.

Gin, fresh pressed pineapple juice, lemon juice, orgeat. Orgeat is a sweetened cocktail syrup made from a base of almonds sweetened with sugar and mixed with flavoring like citrus, or floral essences like rose water and orange extract. The result is an aromatic syrup that is thicker and more flavor-forward than simple syrup. The good news? In place of orgeat you can use Amaretto liqueur or creme d'amade.


1½ oz Gin.

1 oz fresh pineapple juice

½ oz fresh lemon juice

½ oz orgeat

Pineapple wedge for garnish


Shake all ingredients with ice. Strain into a coup glass. Garnish with a pineapple wedge.
