Tuscan Charm Cocktail

Not as widely known as in France, Lavender can certainly be found in the hills of Tuscany.  Many places you will visit there, you will find the scent of lavender and rosemary wafting through the air.  I remember that well when I stayed at an Inn that was a former palace.  After a long day of walking , I sat with my feet in dangling in the salt water pool.  As I admired the scenery of the rolling Tuscan hills, the aroma hit my senses and brought tears to my eyes.

You will need:

2 oz gin

1 oz fresh lemon juice

1 oz honey syrup

3 dashes lavender bitters

Lemon slice and rosemary sprig

Add gin, lemon juice, lavender bitters and honey syrup into a cocktail shaker filled with ice.  Shake for at least 30 seconds, then strain into coupe glass, garnish with lemon slice and rosemary.

Honey syrup~

1 cup honey

1 cup water

In a small sauce pan over medium heat, bring 1 cup of water to a low boil. Remove from heat.

Add in 1 cup of honey and stir until the honey has completely dissolved and melted into the hot water.

Allow the mixture to cool to room temperature.
